
Pastry Care & Storage
We make all our baked goods from scratch with whole ingredients and no preservatives. We recommend eating your goodies fresh, but we also know sometimes you want to stock up on your faves & save ‘em for a rainy day. We do it, too!
Here are our tips & tricks for storage and serving.
Scones
Eat at room temperature or warmed in an oven on the day of purchase. For longer storage, wrap in aluminum foil and freeze. Thaw on the counter a couple hours or even overnight, but keep wrapped. To warm from room temperature, tent with foil and heat in toaster oven or air fryer at 300 degrees 5-10 minutes, till warmed through.
Pies
We recommend serving all our pies at room temperature, unless you’d like to warm up a fruit pie. Here’s the 411:
Fruit Pies: These pies can be left in the box at room temperature up to 2 days from purchase; refrigerate leftovers in the box, or portion and freeze for longer storage. Fruit pies can also be frozen whole. For best results, freeze pie in the box overnight, and then take the pie out and double wrap in plastic. Discard box and return pie to freezer. Before serving, thaw overnight in the refrigerator. To warm a fruit pie from the fridge or from room temperature, heat the oven to 325º F and warm for 20 minutes, checking the pie by placing your hand over the center to see if it is fully warmed (more time may be required for apple pie). Tent the pie with foil to prevent over-browning.
Pecan/Chocolate Pecan Pies: Store in the refrigerator and eat at room temperature within 4 days of purchase. Otherwise follow freezing instructions under Fruit Pies. Thaw overnight in the fridge, then leave out 2-3 hours before it’s time to serve. To warm, place the pie in the middle of the oven, preheated to 325º F non-convection, and heat 10-15 minutes or until warmed through.
Chess Pies & Custard Pies (Lemon, Pumpkin, Chocolate, etc): Store in the refrigerator and eat at room temperature within 4 days of purchase. Freezing and heating are not recommended for these pies.
Cookies
Eat at room temperature on the day of purchase. Cookies will keep up to 4 days from purchase is stored in a sealed metal tin (this is my mom’s trick for making cookies last longer and it always works. Something about plastic wrecks the texture of cookies). To freeze: if cookies are in a wax paper sleeve, just put them in a bag or container and into the freezer. Keep up to 1 month. If cookies are loose, either wrap in foil or store in a plastic container between sheets of wax or parchment paper. Keep up to 1 month. For bars or brownies, double wrap in plastic and freeze up to 1 month. The easiest way to warm up a cookie (particularly a SuperDeluxe) is to microwave it no more than 10 seconds. Yum!
Casual Cakes, Loaves & Slices
Eat at room temperature on the day of purchase. For longer storage, double wrap and refrigerate up to 2 days or freeze up to 6 weeks. Thaw on the counter overnight for whole loaves, or a couple hours for slices. Do not microwave.
Other Fruit Desserts and Pastries
Hand Pies filled with fruit are best eaten on the day of purchase, or if eaten the next day, we recommend heating in an air fryer or toaster oven at 300 degrees for 6-10 minutes. These can also be frozen for longer storage, and thawed on the counter for a few hours. We do not recommend freezing a Hand Pie filled with frangipane, as this may affect the texture. For Fruit Crumbles: eat at room temperature on the day purchased; otherwise, refrigerate for up to 2 days. You can also freeze a fruit crumble wrapped in foil up to 2 weeks. Thaw on the counter for a few hours. Only reheat in an air fryer, oven or toaster oven, about 325 degrees, 10ish minutes.
